	First peel the med/large summer squash. ("Zucchini" is one kind of summer squash, the one in this photo is a 'Costata'.)
	Once the peeled squash is rid of it's 'ends', cut as Manny is in this photo, but not all the way through.

	The donkey ears (vegetarian version) drying. Recipe: once dried, the 'ears' can be stored, then placed in boiling water and served with mole as a vegetable side dish.
