click to enlarge In this photo the ground is white from an application of gypsum. Gypsum is a natural soil conditioner - it actually is soil that is mined out in the San Joaquin Valley. Gypsum is added to the soil yearly to help make the oil more friable and to make existing nutrients more available to crop plants by interrupting the chemical bonds that bind the nutrients to clay particles. We put one ton of gyp on this two acre field in early December.

click to enlarge These are Garlic Scapes from our farm. We made tacos out of this very batch, they were like a thin asparagus in texture, garlic-y in taste. Here's a link to a slightly larger photo of the scapes.
