Caprese Salad with psychadelic colors I made the fresh white mozzarella cheese magenta by mixing it first with the cooked beets, below. m |

These cooked beets were dressed with a homemade vinaigrette. I would have put more green onions and a generous amount of chopped Italian parsley if I'd had them. It needed some green! but it was tasty. Steamed Beets Preparation Photo Essay
