Chives are in the same family as onions, scallions and garlic, they grow from small bulbs. In the middle ages, chives were promoted as a cure for melancholy and believed to drive away evil spirits. Don't heat chives or they will lose their flavor and vitamin C, as well as their digestive properties.

COTTAGE CHEESE WITH CHIVES
| 8 oz. 1 tbsp. 1 1 bunch 1/2 tsp. |
cottage cheese mustard shallot, finely chopped chives, washed and chopped paprika salt white pepper |
Blend cottage cheese and mustard. Mix shallot & chives into cottage cheese. Season with paprika and pepper and garnish with more chives, if desired.

| 5 tbsp. 1 tbsp. 1 tsp. 3 tbsp. 2 tbsp. |
olive oil white wine vinegar Dijon mustard Salt and Pepper chopped chives chopped tarragon (optional) |
Mix up and dress a salad.
