Quince has been revered since antiquity as a fruit whose magic is only revealed through cooking. It is high in pectin and not sweet at all, so it is versatile in both sweet and savory recipes, and excellent for jams and preserves. These quince varieties are from Russia and Crimea which are reputed to be able to be eaten raw, but the astringency leads most people to cook it.
